We were in grandparent heaven last week visiting Florida. Our son, Isaac, and his wife, Kara, live there with their three little ones.
Baby Oliver was baptized on Easter so we had a very special day. Our older son, Jake, and his wife, Becky, were the godparents; they flew in from Minnesota so we had a few wonderful days together in the Florida sunshine.
One of my favorite things to do is bake or cook with a grandchild; usually just one at a time to preserve what sanity I have left. Last Christmas I gave each of our older grandkids children’s cookbooks. Clare (5) and Sophia (almost 7) read through their cookbooks with me when we arrived in Florida and they choose recipes for us to try on this visit. These easy chicken fingers are from the “Dora the Explorer Cookbook” which includes many healthy options for kids that adults will enjoy as well. My unsophisticated taste buds are very impressed with this cookbook.
Notes:
• The chips we used didn’t have as much flavor as we would have liked. I think a chip like Fritos would be a better option.
• If you need gluten free, there are many corn chip options that will be easy to use for this.
• You could partially make this ahead by letting the chicken soak all day in the egg mixture and then rolling in crumbs and when you’re ready to bake them.
• Instead of “chicken pieces” pressed into the shape of fingers or nuggets, you can use real chicken!
Ingredients
1-2 pounds chicken breasts, cut into fingers or nuggets
1 egg
½ cup fat free sour cream
1 tsp salt
4-6 cups tortilla chips, crushed into large crumbs
Directions
Preheat oven to 375 degrees F.
Spray a large baking pan with cooking spray.
Have an adult cut the chicken into fingers – or nuggets.
Whisk an egg with a fork and add the sour cream and salt.
Soak the chicken in the egg mixture for a few minutes. (Or hours.)
Put the tortilla chips or Fritos in a large baggie and crush with a rolling pin.
Pour crumbs onto a large plate or shallow bowl.
Roll the chicken pieces in the crumbs one at a time and place on a greased baking sheet.
Bake 10 minutes and turn chicken over.
Bake another 5 – 10 minutes until done. Chicken should not be pink inside when done.
Chicken fingers or chicken nuggets are so easy and can be made quickly with just a few healthy ingredients. Your kids will be thrilled to help you make these and you won’t feel guilty serving them for dinner.
