Summertime – and the living is easy. And so are the dinners. Our summers are only a few months long in Iowa, but the heat can be intense. As a result, I enjoy making dinners that don’t require an oven. OK, you’re thinking grill – duh! But I’ve never grilled. Never.
That was hard to admit. My husband thinks HE’S the grillmaster, so I’ve never challenged that. Why would I? It leaves me free to do other things when he manages the grill.
Problem is, he’s working very long hours these days and I don’t want to ask him to grill when he’s finally home.
Solution: grill more on the days when he is home. We grilled up a pile of chicken breasts over the weekend when we had company. There were several left over on Monday, so I made a salad with them for dinner. Not only convenient, but it was all ready for him when he finally walked in at 8:30 pm.
I know we all know how to make salads, but just in case you need a nudge, chop a few veggies and enjoy one soon.
First – I almost always marinate chicken before I grill. The simplest secret is Italian salad dressing – creamy, light or regular. It’s full of herbs and makes the chicken so moist.
For the salad, start with a bed or Romaine or other lettuces and raw spinach.
Chop your favorite veggies. I used: green pepper, avacado, green onion, radishes, carrots. Normally I would have a juicy tomato on top, but I was plum out of tomatoes.
Other great additions: hard boiled eggs, cheese cubes, croutons, bacon bits, walnuts, pecans, pine nuts or fruit.
Then I chop the chicken into bite sizes and sprinkle among the vegetables. All he has to do is add a dash of dressing and dinner is served.
Salads are so beautiful! And so versatile. Change out the meat, add other veggies or fruits and you have a totally different dinner.
