This looks delicious--I cannot wait until the wild raspberries in our backyard are ready to be picked. I think I will make a salad like this when they are ripe. :-)

I LOVE this recipe. Thank you so very much! I'm glad you mentioned the microwave, because I've tried that & it comes out great (and fast!). Also, I've been leaving all of the sweetener out, but then topping the finished custard with a dash of the Torani sugar-free salted caramel syrup (zero calories and gives it a flan-like flavor) and a sprinkling of mini chocolate chips. YUM!

Lemon oil may be used in aromatherapy. Researchers at The Ohio State University found that lemon oil aroma does not influence the human immune system, but may enhance mood.

Anita, if all else fails, add 1/2 cup of powdered sugar and beat it. That should help. Good luck!

I'm in Denver and maybe it needs to go a bit longer. I used water vs. coffee. It wasn't too gooey after a while, but not as firm as it needs to be for serving neatly w/o a fork. Thanks for the ideas.

Hi Anita, sorry your glaze was gooey. Yes, try reducing the coffee or boiling it longer. Did you set your timer to boil it for 5 minutes? That really helps. I hope you have better success next time because it's soooo worth it! Clare

This is delicious, but did not really set up dry enough to the touch except in the frig. Would I just reduce the liquid to make a harder glaze? Thank you.

Yes! I often use coconut oil and it's great in this recipe, along with the muffins in a mug. Thanks for stopping by.

Wow this was so good! I subbed applesauce for yogurt (no dairy diet) and skipped the walnuts because I was out. The cinnamon taste was very strong, but it was good! I will try it with raisins next time.

I have searching high and low for a microwave mug cake... that actually tasted good. And finally I found it! I was mixing the batter in my trusty cup when I wondered, (I also wondered why am I so obsessed with this? but that will be another story) and I really wished it would turn out, edible. But low and behold. IT DID. Thank you so much! It is now my little treat, and I will eat it often. (I happened to have some vanilla ice cream and chocolate sauce handy so I did use that ;))
