Banana Nut Cinnamon Muggin – Muffin in a Mug – GF and Dairy Free

Mornings have never been sweeter since I discovered the Muggin – a muffin in a cup. And the last week has been especially fun experimenting with variations on banana nut.

Today I’m happy to bring you a gluten and dairy free muggin! Long ago I found that adding cinnamon to banana breads always amped up the “wow” and “yum” factors. Just what every baker wants to hear. And of course, we know that cinnamon helps regulate blood sugar -bonus!

Ingredients for Banana Nut Cinnamon Muggin
1 egg
1 TBS honey
1/2 ripe banana mashed
1/2 tsp vanilla
2 TBS almond meal
1 TBS oats
1/4 tsp baking powder
1 tsp cinnamon
2 TBS nuts
Note: If you want the nuts to stay in the bottom of the cup, place them first. Then mix the rest of the ingredients in a separate bowl. Pour them over the nuts when you’re ready to pop into the microwave. It’s just a fun touch. If you don’t want to mess with it, build your Muggin all in the cup and enjoy.

Directions for easy method (as if there’s a difficult method!).
Use a ceramic or glass mug that will hold 12 – 16 oz.
Smash banana in bottom of mug with a fork.
Add the rest of the ingredients and mix until well blended.
Microwave about 2 minutes or until the center is done.
Turn out onto a plate or eat in the mug.

Chocolate Chip Muggin – Muffin in a Mug

My long blond Goldilocks wig has had a workout this week as I tripped through the minefield of chocolate chips looking for ones that are “just right” for the Chocolate Chip Muggin.

You remember the story of Goldilocks and the three bears, right? She breaks into their home in the forest and eats their food, finding one oatmeal too hot, one too cold and one “just right”.

Chips were “just right.”

Then she makes herself at home trying out their rocking chairs and other random furniture. I’m sure she dug through their cupboards and sampled chocolate until she fell into a sugar stupor and needed a nap. This led her to the bedrooms where she found one bed too hard, one too soft and one that lulled her into a deep slumber- “jusst right.” The bears came home, of course, and instead of having her hauled away, they all became fast friends. Eventually they must have made a rocking chair “just right” for her.

Well I haven’t made a rocking chair for you because who has time for that? But I did find the perfect size of dark chocolate chips for a new Muggin…a muffin in a mug.
Yes, these have a bit more sugar from the chips than other muggins, so you might want to keep these for an after school snack. Or a dessert. But they still are packed with great nutrition, so dive in.

Ingredients for the Muggin mix
1 cup whole wheat pastry flour (or white flour – your choice)
1 cup oats – quick or old fashioned
½ cup ground flax meal
½ cup wheat germ
3 TBS baking powder

This saves a few steps so you can mix, microwave and bolt out the door, dragging your Muggin behind you. (Wrong nursery rhyme.)

I tried mini chips first and they were fine – but not fabulous. I like mini chips for adding to Energy Balls, but they were just too tiny to have much chocolate impact for the Muggin.

Next I tried my favorite chips – Ghirardelli Dark, which have 60% cocoa. But they are really large and fell to the bottom of the mug while baking. This made a nice chocolate mushy frosting on the top, when inverted onto a plate, but there were no chips for the rest of the Muggin.

Finally, I got some Hershey’s dark chips, which turned out to be “just right.” Goldilocks I’m not, but I can understand her quest. Now I had rich warm chocolate on the top of my Muggin and they were nicely dispersed right down to the last few bites.
Very satisfying.

Ingredients for Chocolate Chip Muggin
2 TBS plain yogurt
1 egg
1 TBS honey
1/2 tsp vanilla
3 TBS muggin mix (see link above)
2 TBS Hershey’s dark chocolate chips

Directions
Use a mug that will hold 12 – 16 ounces.
Using a fork, whisk the egg and other wet ingredients inside the mug.
Add the mix and the chocolate chips and blend well.

Microwave 1 1/2 – 2 minutes or until done.
Invert onto a plate, or eat out of the mug.

Now I need a nap.
I’m looking for a bed that’s not too hard and not too soft… Let’s hope the bears won’t mind the invasion.

Oatmeal Cinnamon Muffin in a Mug – Muggin

The muggins are some of the most popular items on my blog, so I am happy to add another to the mix – oatmeal cinnamon muggin with walnuts and craisins. And this one is gluten free.

If you follow this blog, you may already have a container of “muggin mix” in your pantry. Leave it for another day because this one won’t use the mix. Reason? There’s no flour, wheat germ or ground flax meal. Just oats.

I was hungry for oatmeal, but also knew I need the protein from an egg. So – voila! An oatmeal muggin. The texture was very similar to the other muggins, which is great for those who cannot do gluten. Anyone would enjoy this delicious breakfast. It was so filling, I had to share the last bites with Zoe the dog. And you can leave out the walnuts and craisins – if you’re nuts!
They add a ton of texture and flavor, but it’s your call.
Yes, I did think about sneaking some chocolate chips into this, but I’m saving that for another post.

Ingredients for Oatmeal Cinnamon Muggin
1 egg
1 TBS honey
2 TBS plain yogurt (or vanilla flavored)
3 TBS oats – I used old fashioned
1/4 tsp baking powder
1 tsp cinnamon (More if you’re like my hubby who can never get enough cinnamon.)
2 TBS chopped walnuts (Pecans would be delightful.)
2 TBS dried cranberries (Or raisins or golden raisins.)

Directions
Use a mug that will hold 16 oz or more.
Put the ingredients into the mug in the order given and whisk with a fork or small whisk.
Microwave 1 1/2 – 2 minutes until the center is done.
Invert onto a plate and enjoy warm or cool.

Share with your friends. These are perfect for teens who need a healthy breakfast, or seniors living alone, or folks with diabetes or those who need gluten free food.

Pumpkin Pecan Muffin in a Mug (Muggin)

I’m so happy to present the next offering in the “Muggin” series. These little muffins have been incredibly popular and I know you’ll love the pumpkin version.

If you’re new to all the Muggin fun, it started with several cakes in a cup. The Chocolate Cake in a Cup and the Caramel Apple Cake in a Cup are still wildly popular. Then I moved on to muffins. You can find them all to the left under “single servings.”

Along the way I created a “mix” that you could whip up to make those morning muffins go together even faster.

Ingredients for the muffin in a mug mix
1 cup whole wheat pastry flour (or white flour – your choice)
1 cup oats (I use quick for these.)
½ cup ground flax meal
½ cup wheat germ
3 TBS baking powder
Directions
Put all the dry ingredients in a storage container. Shake it well until blended. Keep it stored with a lid on for 2-3 months in your pantry.

So how do you make the pumpkin muffin? Easy:
1 large egg
1 TBS agave nectar or honey
1/4 cup solid pumpkin
1 TBS yogurt
3 TBS muggin mix (see above)
1 tsp cinnamon
1/4 tsp each nutmeg, clove, ginger
2 TBS pecans – optional (but why would you skip them?)
Blend them in a large mug that will hold about a cup and a half.
Microwave for two minutes or until muffin is done.

More muffin nirvana. You have the advantage of eating an entire egg and a few pecans, so this is high in protein. The pumpkin muffin in a mug is also high in fiber and low in sugar. Enjoy your breakfast – although all my grandkids think they make great desserts too.
